Cleanup Night…

For those of you who don’t know, clean-up night around here is usually an interesting combination of foods and flavors and I almost always get a delightfully satisfied grin from taste-tester (with his mouth full). 😉 (Previous cleanup nights… pasta, pie, minestrone)

Last night, I was just noodling around in the kitchen, originally just making leftovers of my Mexican bean mixture when things got a bit out of hand. I just kept making stuff, and then thinking, oooh yeah that would be great with it… and when I was done I had a wonderful feast. And the majority of my produce had miraculously been ‘cleaned up’.

I didn’t take pictures until it was all put together…

Baked potato (microwaved 5 min, then baked 400°F for 10-15 min), margarine, chipotle chili powder, Mexican bean mixture, onions (sliced, drizzle of olive oil, dash of salt and pepper; microwaved 2-3 min), shredded romaine, roma tomatoes, squeeze of lime juice…

Multi-grain flour tortilla chips (lightly oiled w/ olive oil, sprinkle of salt and chipotle chili powder, then cut into strips; baked 400°F for 5-10 min)…

Delicata squash (cut in half and de-seeded, placed faced down on parchment-lined cookie sheet; roasted 400°F for 40 min), margarine, maple syrup, cinnamon, pecans…

It was amazing!

In other news…

In just a few days, I will be joining several hundred other vegan bloggers for Vegan MOFO 2010. What is Vegan MOFO? It’s a month dedicated to writing about food (check out this link). The goal is to write/blog every weekday and the topic is food, of course. Vegan food! It’s also a great way to see who else out there is a vegan blogger! What better way is there to get to find other blogs and to also have others find your blog? It starts November 1st, but you can sign up until Nov. 2 to get on the big list. 😀

I’d better get dinner started… tonight’s dinner will look a lot like this one, with a side of this. 😉
