Fresh Pinapple makes awe-inspiring stir-fry!

Just finished up my leftovers of this really great stir-fry. I didn’t take pictures, but had to post a shout out so that others may enjoy this wonderful creation. The most awesome book I’ve come across so far is Veganomicon by Isa Chandra Moskowitz & Terry Hope Romero, every recipe I’ve tried has been out of this world! The Pineapple-Cashew-Quinoa Stir-Fry on p.175 is no exception. It has pineapple, cashews, quinoa, scallions, garlic, red chile, ginger, red bell pepper, peas, basil, mint, and limes. The next time you are looking at a pineapple and wondering ‘what should I make with this’, you MUST try this dish, you won’t be sorry. I wish I had pictures to show you, perhaps next time I won’t gobble it all up before I get out my camera.

I made the mistake of making brown jasmine rice while chopping up the pineapple, so I have not tried it with quinoa, yet. It’s great with rice, so I’m sure I’ll love it with quinoa. Also I did not have a red chile so I used crushed red pepper flakes to give it some heat. I also omitted the mint. A word of warning, if you save it for leftovers the cashews start to get soft (not a good thing, in my opinion). So I suggest you ‘garnish’ with cashews so that the cashews will be nice and crunchy. The lime makes the dish perfect!
